Champagne, a story of patience
Champagne is a creation, a dream... and a lot of patience!
Facing the worst difficulties - invasions, wars, vine diseases, economic crises... - the Champagne vineyard has always known how to overcome them.
Over the centuries, the patience to rebuild has been the dominant characteristic of this region and its vine culture.
From the Romans, who introduced the vine, to the monks of the Middle Age, who rebuilt and replanted, continuing with the monk Dom Pérignon, brilliant alchemist of the transmutation of sparkling wine in Champagne, or the solving of the problem of fermentation control with Louis Pasteur's researches, the arrival of phylloxera at the end of the 19th century devastated all vineyards and, some years later, the First World War buried Champagne vineyards under grenades.
KNOWING HOW TO BE PATIENT
The secret of a good Champagne is not only about savoir-faire: in order to make a good Champagne, there must be love. Patience is exactly that.
At harvest time, the Vigneron can't yet scream victory.
He knows the battle has not been lost, he does not yet know to what extent it has been won. He does not yet know if the victory was brilliant enough to allow the creation of a Millésime, which he has been dreaming of since he tasted the first grape of the year. Nature is generous, but it doesn't produce extraordinary things every year.
A Millésime is the extraordinary, and therefore not necessarily every year. This work will lead to the tasting of the "vins clairs" (clear wines) in March.
It is only in March that the Vigneron will know whether the work done during the previous year has given good results.
If he cultivates his vineyards with the utmost care, he also cultivates wines in his cellars. Vignerons know how to manage wines in a cellar like haute couture, parcel by parcel, thanks to a savoir-faire which goes back to a long time ago.
As in the vineyards, this cellar culture is a sum of details, gestures, attention and intuition. And patience.
Letting your Champagne age and knowing how to adapt to its evolution: patience is the very essence of the Vigneron's work, throughout the production process.
