It pairs beautifully with oysters, citrus-dressed yellowtail carpaccio, tuna tartare with black radish, or grilled octopus with olive oil and lemon.
For a more substantial dish, its freshness and salinity complement grilled sea bass with fennel and aromatic herbs beautifully. With cheese, a fresh goat’s cheese or a delicate soft cheese will respect its finesse without overwhelming its character.
From the very first glance, the overall impression is one of delicacy, freshness and elegance.
With aeration, the aromatic profile becomes more complex and distinctive, with white pepper, thyme, grapefruit zest and damp chalk gradually emerging. The bouquet then gains in depth, developing subtle notes of dairy, delicate spices and freshly baked bread.
A nuanced and refined expression in which floral freshness and minerality come together with remarkable ease.
The fine effervescence gradually melds into the body of the wine, creating an elegant, enveloping texture with a silky softness.
Notes of grapefruit accompany its evolution, while the salinity becomes increasingly pronounced, bringing depth and precision to the whole.
Freshness and minerality carry through the lingering finish, which closes on elegant iodine and maritime nuances, highlighting the origin and character of this Champagne.

Vintage 2020 *NR
A Millésime 2020 of remarkable finesse, where the freshness and minerality characteristic of the Côte des Blancs meet a silky texture and elegant aromatic depth.
Its saline tension and delicate maritime nuances make it particularly enticing as an aperitif and a natural partner at the table for oysters, raw fish, grilled octopus and grilled fish.
Certified Organic Winemaker
Born in the cradle of a winegrowing family in Vertus, my childhood was naturally intertwined with the vines. From an early age, I was introduced to the rituals of the vineyard, seeing summer work as an essential gateway to my school vacations.
However, it was at the age of 15 that my true passion for the art of wine was awakened. My first experiences of winemaking and tasting ignited in me a love for oenology and the subtle art of tasting.
What really captured my imagination was the aromatic richness of the wines, sculpted by their terroir of origin and the history of each vineyard.
I discovered that the heart of a great Champagne de terroir beats thanks to the exceptional quality of its grapes.
My philosophy is rooted in a desire to produce grapes and wines that faithfully reflect their terroir. I am committed to cultivating my vines in harmony with the surrounding ecosystem, thus preserving the essence of the life that abounds there.
For me, wine is more than a drink; it's a story about the land, a story of passion, commitment and a deep respect for the precious gifts of nature.
This is the essence of my quest as a winemaker in Vertus: to create wines that, with every sip, reveal a story, a place, a passion.
