Every bottle in our collection is the result of a long process that begins long before the harvest, in the vineyards.
Behind each Cuvée lies the meticulous work of the Vignerons, who follow the vine’s cycle with passion and precision, overcoming the challenges of each vintage to obtain grapes of exceptional quality.
Wine is shaped first and foremost in the vineyard, and understanding its journey helps to fully appreciate its depth. It all begins with pruning, the first step in a new viticultural cycle.
In the heart of winter, as the cold hardens the soil and the wind sweeps through the rows, the Vignerons carefully shape the vines to ensure their balance and the quality of the future grapes. This is a precise and strategic process: selecting the right fruiting canes already influences the vine’s vigour, yield, and the character of the grapes.
Then comes spring, and the vine awakens. The vineyard comes back to life, marking the start of a new cycle that will culminate in the harvest.
FROM AWAKENING TO HARVEST: THE KEY STAGES
- March: The vine’s tears
As temperatures rise and the soil warms, the sap begins to flow again, seeping from the pruning cuts—an early sign that the vine is coming back to life.
- Late March - April: The First Buds
The canes start to develop, and the first delicate, translucent leaves emerge. This moment is eagerly awaited each year, as their fresh green glow symbolizes renewal—an enchanting sight that never ceases to fascinate.
- April - May: The first grape clusters
The tiny flower buds start to appear, heralding the formation of future grape bunches. But this period is also delicate: late frosts can weaken the young shoots and endanger part of the harvest. The Vignerons remain on high alert, ready to protect their vines.
- June: Flowering
Tiny white flowers bloom, releasing a subtle fragrance throughout the vineyard. In just a few days, a crucial process begins, directly determining the volume and quality of the future harvest. It is estimated that around 90 to 100 days will pass between flowering and harvest.
- July: The birth of grapes
The flowers give way to tiny green berries that start to develop. At this stage, the vine is in full growth and requires close attention to ensure the grape clusters receive optimal sunlight and nutrients.
- August - September: Ripening and harvest
The berries gradually change color, their sugar levels rise, acidity finds its balance, and aromas become more intense. Vignerons carefully monitor this ripening process to determine the perfect moment for harvest. In Champagne, grapes are picked exclusively by hand—a meticulous tradition that marks the final step before they reach the press and the winemaking journey begins.
